Fermentation, maturation, ageing
Made of 100% Merlot. Grapes are destemmend and given a 35-45 days maceration, followed by a fermentation at 28°C. The wine goes to French oak barrels for malolactic fermentation and maturation for a minimum period of 12 months, then it is assembled in stainelss steel vats. After 20 μm cartridge filtering and bottling, the wine is bottle-aged at least 6 months.
Sensory profile
Purple-tinged ruby red. A very structured wine, fluid in the glass with dense body. The nose shows its complexity with ethereal notes with nuances of ripe red fruits, cherries and blackberries. End notes of violet and sweet tobacco. Long and persistent bouquet. Smooth and luscious on the palate, with tannins still evolving and vanilla in the background. A well-balanced acidity reveals freshness and a very promising evolution for future years.
